    Description

    Here's a lot of 6 PACKETS fresh dated Fermentis Red Star® Côte des Blancs (Davis 750) WHITE WINE YEAST.  This strain respects the varietal aromas of the grapes and intensifies primary aromas, especially the more aromatic grape cultivars like Sauvignon Blanc and Moscato. Cote Des Blancs is an excellent general purpose yeast for all white wines, blush wines and orchard fruit wines. I have used it successfully with white muscadine, dandelion, honeysuckle, and strawberry. Produces 12-14% alcohol with a moderate fermentation speed.  One pack will do 5-6 gallons of wine. If you are just doing three gallons you can use a half a pack, fold the foil over and refrigerate. Use a quarter pack for one gallon.
    Côte des Blancs produces fine, fruity aromas.  Red Star rates Côte des Blancs as it's very best yeast for all white wines, blushes, and orchard fruits (especially apple!) hence the name "Coastal White".  Also wonderful with Light Berries, Citrus Fruits, Flowers, and Melons.  Often chosen when the wine should not ferment to dryness.
    Cote des Blancs is a strain of Saccharomyces cerevisiae, derived from a selection obtained in France by the Geisenheim Institute in Germany, identical to Geisenheim Epernay, but producing less foam (Epernay 2). This yeast requires nutrient addition (But go easy on the DAP) for most fermentations and will generally finish with some residual sugar.  Ferments best between 17°-30°C (64°-86°F). Sensitive below 13°C (55°F).
